Finely chiselled Saint-Aubin: pale gold, with pear, apricot, white flowers and crushed stone, and a light touch of hazelnut. The palate is fresh and silky, with citrus, a firm mineral spine and a long, savoury, chalky finish. 2021 was a tiny, frost-hit vintage with ruthless sorting, and it gives a lighter, very pure and fresh expression.
It’s superb with scallops, langoustines, grilled or poached fish, poultry in a light cream sauce, or Brillat-Savarin.
